At the center of the pool bar overlooking the Pacific Ocean is Capella Pedregal’s latest addition, Crudo. A perfect spot for a quick afternoon snack such as a sushi roll, a light evening meal or watching the sunset.
The word ’crudo’ is Spanish for ‘raw’ and refers to the innovative and refreshing method of slicing fish thinly, then drizzling it with oil and seasonings. By integrating fresh, local Cabo San Lucas seafood, Crudo will offer ceviche and a selection of sashimi style dishes and sushi rolls.
Crudo is open from 11 a.m. till 6 p.m. A sample of the menu includes Crudo Rolls consisting of asparagus, avocado, cucumber and shashimi and Chilean Salmon Crudo with pickled cucumber and charred lemon mayo.
